Marinara and Elbow Noodles

Description

Simple, one pot, quick marinara with elbow noods for one.

Ingredients

  • 3/4 C Elbow Noodles (macaroni, or similar sized noode)
  • 1 1/3 C Water (don’t use tab if it tastes like clorine)
  • 2 Tablespoons Tomato Paste (I like Cento Organic or Trader Joe’s, the kind in tubes)
  • 2 tsp dried minced onion
  • 1 Tablespoon butter
  • 1/4 teaspoon salt or to taste (you need some, don’t forget it or this will be bland as fuck)

Instructions

  1. Add water, tomato paste, minced onion and butter to a small sauce pan over high heat.
  2. Once the mix is boiling and the butter is melted, taste it. Add salt, and taste again. Don’t add a lot of salt, just get the flavors popping but hold back a little if you want to add some parmesan to top it off at the end)
  3. Add the pasta, and stir frequently until the pasta is done (however long it takes on the package). For me this is generally about 6-7 minutes. You’ll need to stir frequently because the sauce is going to reduce right in the pad and make a starchy red sauce that will stick to the noodles.
  4. Once the sauce is as thick as you like it and the pasta is done, throw it in a bowl, optionally top it with parmesan (my favorite) and eat up.
